Shinko Series 7" Santoku — a Japanese multi-purpose knife hand-forged from 110 layers of Damascus steel made by alternating 55 layers of AUS-10 and 55 layers of VG-10. This hybrid construction pairs AUS-10’s toughness with VG-10’s edge retention, then finishes in a thin 9–12° grind for smooth push cuts, fast chops, and precise mincing. A stabilized maple + resin handle and stainless bolster keep the blade balanced and secure in hand.

Key Highlights

  • 110-layer Damascus: 55 layers of AUS-10 + 55 layers of VG-10 combine toughness, bite, and long-lasting sharpness.
  • 7" Santoku profile: flat belly for push cuts, gentle tip for fine work, and tall blade for safe knuckle clearance.
  • Thin 9–12° edge: low resistance through vegetables, proteins, and herbs.
  • Stabilized maple & resin handle: secure, water-resistant, and comfortable during long prep sessions.
  • Full composite tang + stainless bolster: confident balance and control.
  • Includes fitted sheath & gift box: ready for safe storage or gifting.

FAQ

What makes AUS-10 + VG-10 special?

By alternating 55 layers of each steel, the blade balances toughness and flexibility (AUS-10) with high hardness and edge life (VG-10), resulting in a durable knife that stays sharp longer.

Is this Santoku suitable for left- and right-handed users?

Yes. It has a double-bevel edge (9–12° per side) for ambidextrous use.

What tasks is a Santoku best at?

Push-cutting vegetables, chopping herbs, portioning boneless meats and fish, and precision slicing—its flat profile keeps cuts clean and controlled.
