The Shinko Series 8" Gyuto is a Japanese chef’s knife forged from 110 alternating layers of AUS-10 and VG-10 Damascus steel (55 layers of each). By pairing AUS-10’s toughness and flexibility with VG-10’s hardness and edge retention, this blade delivers razor performance and long-term durability. Finished to a 9–12° double-bevel edge and fitted with a stabilized maple & resin handle, the Shinko Gyuto glides through slicing, dicing, and fine prep with confident control.
