The Nakiri vegetable knife is 7 inches long, the slicing knife is 8.5 inches long, and the utility knife is 5 inches long. Kanpeki blades are single bevel 片刃 Kata-ha. Forged using high-grade steel from Ibaraki, Japan, this pair of versatile knives perform a range of skilled tasks. The set includes a Kiritsuke knife and a Honesuki boning knife, forged and tested to the meticulous standards of Kamikoto 神箏.
The single bevel Kiritsuke knife is ideal for slicing fish or for deft work with vegetables. Weighted and balanced for optimal handling it is light yet substantial, and robust yet razor sharp. The Honesuki boning knife is perfect for de-boning poultry, and is adept for other purposes such as filleting. It is thin, light and nimble, with a reverse tanto tip allowing for easy piercing and precise cuts.

For long and deep, straight cuts, the 13-inch Yanagiba can skin large fish in one deft motion.
The 13-inch Yanagiba is handcrafted from Japanese Ibaraki steel molten at more than 3092 °F by the shorelines of Tokyo Bay, Japan.
It is sharpened by Kamikoto's master knifesmiths through a process refined over generations. Each Yanagiba knife is individually inspected before it leaves our workshop.

Non-serrated, razor sharp blade
Continuing Japanese tradition, the blade of the Kamikoto Steak Knife is non-serrated and sharpened into a 11° angle.
Handcrafted through a process refined over generations, it cuts through steak without sawing. This way more capillaries of the meat remain intact, retaining more juices of the meat inside.

The Steak Knives are made from a carefully selected, high-grade Japanese Ibaraki steel from the Keiyō region near Tokyo, Japan.
The steel has been molten at more than 3092 °F before being handcrafted into knives.
